Description
A high quality low trans cocoa butter replacer specially processed from fully refined vegetable oils and fats, KEMFAT LT is a low trans cocoa butter replacer to replace cocoa butter in compound chocolate for coating on biscuits, wafers, nougats, nuts and raisins.
Being non-lauric in origin, KEMFAT LT is suitable for coating on food products containing nuts and/or moisture fillings cream without the risk of developing soapy off flavours.
KEMFAT LT has a trans content of less than 13% which is much lower than the traditional CBR without compromising its functionality. Chocolate coating prepared using KEMFAT LT forms stable crystal on rapid cooling without tempering. The amount of cocoa butter tolerance in the recipe may be up to 15% of total fat content.
